Nombu kanji/Rice and lentil porridge



Introduction:
Nombu kanji/Nonbu kanji is a porridge made with rice, lentils, vegetables and spices..This kanji is popular in South India especially in the states of TamilNadu and Kerala. Nombu kanji is usually served during the holy month of Ramadan in the evenings when Muslims break their day long fast...This makes a sumptuous, fulfilling, healthy breakfast or lunch not only during the holy month but throughout the year...This recipe, is a non veg version of Nombu kanji....For veg version just skip minced meat..Vadai, samosa and bajji are usually served as accompaniment to Nombu kanji...I served it with falafel

Ingredients:

Raw rice
1 cup (200gms)
Split green gram/passi paruppu/split moong dal
1/4 cup (50gms)
Fenugreek seeds/vendayam
2 tsp
Onion (medium)
1/2 sliced
Small onion/shallots
2 sliced
Green chillies
2 broken into half
Tomato (medium)
1/2 sliced
Carrot
1/4 cubed
Coriander leaves
2 tbsp chopped
Mint leaves
 2 tbsp chopped
Salt to taste

Water
8 cups
Coconut milk
3/4 cup
For tempering:

Oil
 2 tbsp
Cinnamon
2 small pieces
Cardamom
2
Onion (medium)
1/2 sliced
Small onions/shallots
2 sliced
Green chillies
1 broken into half
Tomato (medium)
1/2 sliced
Ginger garlic paste
1 and ½ tbsp
Coriander leaves
1 tbsp chopped
Mint leaves
1 tbsp chopped
Minced mutton/mutton keema
100 to 200gms
Garam masala powder
 1 tsp

Method:
  1. Wash and soak raw rice for 1 hour. Wash and soak split green gram/passi paruppu, fenugreek seeds /vendayam (together or separately) for half an hour
  2. Pour 8 cups of water in a large pot and bring to a boil. Drain the soaked rice, split green gram, fenugreek seeds and add to the boiling water
  3. Boil for 10 to 15 min on medium flame until rice is 3/4th cooked. Now add Onion, small onion, green chillies, tomato, carrot, mint leaves and coriander leaves.
  4. Mix well and boil for another 5 mins until rice is overcooked and mushy. Add salt to taste mix well and switch off heat
  5. In a small pan /kadai add oil and all the ingredients under tempering (cinnamon, cardamom, onion, small onion, green chilly, tomato, mint leaves, coriander leaves) and fry until soft .Now add ginger garlic paste,garam masala powder and fry for 2 mins until no raw smell
  6. Add minced meat fry for 2 mins .Pour 1/4 cup of water and add a little salt. Mix well. Cover and cook for 5 mins until minced meat is cooked.
  7. Pour this over the cooked rice and mix well .simmer for 5 mins and finally pour coconut milk. Immediately switch off stove
  8. Nombu kanji is ready to serve

Notes:
  • For veg version just skip minced meat
  • You can cook this porridge in pressure cooker if you want to save time
