one pot creamy pasta. The pasta is cooked in the sauce, in one pan, in 20
min.This recipe yields delicious creamy pasta as the pasta soak up all the

The main ingredient that one should look out for, when buying pasta is durum
wheat or whole wheat. Pasta products made from these ingredients are a healthier
option than other cheaper quality ones made from Maida (refined wheat flour).It

Pasta (penne)
|
300 gms
|
Onion (large)

1 chopped

Green chilly
|
1 (whole)

Garlic

6 cloves (chopped)

Carrot

1 diced

Capsicum

1/2 diced

Beans
|
6 chopped

Sweet corn kernels

2 tbsp

Milk

3 cups or more if needed

Water

1 cup

Cheese cubes

2 grated

Oregano

1 tsp

Pepper powder

1/2 tsp

Chilly flakes

1/2 tsp

Oil

1 tbsp

Butter
|
1 tbsp

1/2 tsp or according to taste

Method:
- Wash and soak pasta in water for 10 min
- Drain off and keep it aside
- Take oil and butter in a pan. When hot add chopped onions, whole green chilly and chopped garlic cloves
- Sauté until onions turn soft
- Add the vegetables (carrot, capsicum, beans, and sweet corn kernels) and fry for 2min
- Add milk, water and salt. bring it to a boil. Add pasta
- Cook for 10 min on low flame without closing the pan
- Stir occasionally
- Check if the pasta is cooked properly (notes)
- Add grated cheese, oregano, chilly flakes and pepper powder
- Give a quick mix and switch off stove
- Serve hot with Hot and sweet tomato sauce
Notes:
- You can choose any type of pasta for this recipe (macaroni, rotini, farfalle...) cooking time may vary
- To test a piece of pasta (whether cooked or not), remove it and bite into it to determine if it’s done
- If the pasta is still hard for your liking, boil it for another minute before checking again
- If the milk water mix is completely absorbed and the pasta is still under cooked, add more milk
- Even after turning off the heat, pasta continues to cook....so keep that in mind
- As it cools, it thickens so add a little milk while reheating
- Chilly flakes and pepper powder can be adjusted according to taste
- And for all the non-vegetarians, you can add 100 gms of minced meat (mutton/chicken) and sauté for 3min (with onions)before adding the vegetables
