Vermicelli Kesari

Prep time: 5 min     Cooking time: 10 min   Serves:4

Ingredients:
Vermicelli / Semiya
 1 cup
Sugar                         
 1/2 cup
Water              
 1 and 1/2 cups
Milk               
 1/2 cup
Cardamom powder    
 1/2 tsp
Ghee               
 3 tbsp
Cashew nuts         
 6 (broken into small pieces)
Raisins            
 6 or more
Almonds/Badam      
 5 (grated)
Food colour(red or  orange)
 a pinch
Salt               
 a pinch

Method:

  1. Take water,milk and food colour in a pan and simmer in low flame
  2. In another pan add 1tbsp ghee.Add broken cashew nuts and raisins and fry until golden brown.
  3. Drain off and keep them aside.
  4. In the same pan add the Vermicelli/semiya and fry until golden brown(1 min)
  5. Now slowly pour the simmering water + milk into the vermicelli.
  6. Add salt and cardamom powder.Mix well.
  7. Cover the pan with a lid and cook (1 min).
  8. Open the lid and add grated almonds.
  9. Give a quick mix.close the pan and cook for another 2 min.
  10. The vermicelli is perfectly cooked and the water is absorbed .
  11. Now add the sugar and remaining 2 tbsp ghee and mix well.(2 min)
  12. Add the fried cashew nuts and raisins.
  13. Close the pan and allow it to rest for at least 10 min.
  14. Vermicelli kesari is ready to serve.

Notes:

  1. Use thick vermicelli for making this kesari.
  2. Sugar can be adjusted according to your taste.
  3. Do not skip adding grated almonds and milk as it gives a creamy taste to this kesari.
  4. Do not cook for a long time after adding sugar.
  5. It may look watery after adding sugar but the kesari will thicken as time passes by.
