Vermicelli Kesari

Method:
- Take water,milk and food colour in a pan and simmer in low flame
- In another pan add 1tbsp ghee.Add broken cashew nuts and raisins and fry until golden brown.
- Drain off and keep them aside.
- In the same pan add the Vermicelli/semiya and fry until golden brown(1 min)
- Now slowly pour the simmering water + milk into the vermicelli.
- Add salt and cardamom powder.Mix well.
- Cover the pan with a lid and cook (1 min).
- Open the lid and add grated almonds.
- Give a quick mix.close the pan and cook for another 2 min.
- The vermicelli is perfectly cooked and the water is absorbed .
- Now add the sugar and remaining 2 tbsp ghee and mix well.(2 min)
- Add the fried cashew nuts and raisins.
- Close the pan and allow it to rest for at least 10 min.
- Vermicelli kesari is ready to serve.
Notes:
- Use thick vermicelli for making this kesari.
- Sugar can be adjusted according to your taste.
- Do not skip adding grated almonds and milk as it gives a creamy taste to this kesari.
- Do not cook for a long time after adding sugar.
- It may look watery after adding sugar but the kesari will thicken as time passes by.
