Introduction:
Aam Panna is a tangy, minty and refreshing
summer drink popular in Northern and Western parts of India. It is the perfect
thirst quencher as it helps in fighting the intense summer heat. This drink is
rich in Vitamins A, B1, B2, C and Minerals such as calcium, potassium, magnesium,
sodium and iron. Here is a delicious recipe of Aam Panna you can try at home

Ingredients:

Raw mangoes/Unripe mangoes (medium sized)
|
2 peeled and diced
|
Sugar or Jaggery syrup
|
9 tbsp or more
|
Cumin powder
|
1 tsp
|
Pepper powder
|
1/4 tsp
|
Black salt / Himalayan pink salt
|
1/2 tsp
|
Mint leaves
|

Water
|
4 to 5 cups (preferably
chilled)
|
Ice cubes
|
5 to 6 (optional)
|
- Pressure cook raw mango pieces along with 1/4 cup of water in a cooker. (1 whistle on high and 2 min on low)
- Leave it to cool completely
- Add the cooked raw mango in a blender jar. To it add cumin powder, pepper powder, black salt or Himalayan salt and mint leaves
- Blend until smooth
- You can store this concentrate in fridge. Whenever you want to serve add 2 or 3 tbsp concentrate into a glass, top it with chilled water, mix and serve
- If you are going to serve it immediately add 4 to 5 cups of water (preferably chilled) and mix well
- Add few ice cubes and pour into glasses
- Garnish with mint leaves and serve
Notes:
- I have pressure cooked mangoes in this recipe; instead you can roast mangoes on stove top until charred, remove skin, seed and follow same method
- Cardamom powder can be used instead of pepper powder
- Adjust sugar, water depending on the sourness of mangoes
- If you do not have Himalayan salt or black salt add normal salt (1/4 tsp)
