Introduction:
Sura Puttu is a popular dish in Kerala and TamilNadu.
It is very simple to prepare, mildly spiced and flavorful. This Puttu is
usually made with Sura/Baby shark or vaalai fish/sword fish. But you can try
with any other dense fish. Each region has its own style of making this Puttu. And
this recipe is Thoothukudi style Sura Puttu...

Ingredients:

Baby shark/Paal Sura
|
250 Gms
|
Coconut
|
1/2 cup
|
Cinnamon
|
2 pieces
|
Cloves
|
2
|
Fennel seeds
|
1/2 tsp (optional)
|
Green chillies
|
3 to 4 sliced
|
Garlic
|
8 to 10 cloves sliced (optional)
|
Few curry leaves
|
|
Onions (medium)
|
2 chopped
|
Turmeric powder
|
1/2 tsp
|
Salt
|
1 tsp
|
Oil
|
2 tbsp (preferably
coconut oil)
|
Method:
- Cook fish pieces + 1/4 tsp turmeric powder in 1/4 cup of water (Do not add more water)
- Cook (2 min) and turn over the fish to the other side. Cook for another (2 min)
- If there is extra water- drain off
- Allow it to cool completely
- Remove skin and bones from fish pieces and shred it with your hands (do not squeeze water from fish)
- Keep it aside
- Take grated coconut, cinnamon, cloves and 1/4 tsp turmeric powder in a blender jar
- Use pulse function (button) and pulse it one or two times
- Add this coconut mix to the shredded fish .Add 1 tsp salt (mix well using your hands)
- Keep it aside
- In a thick bottomed pan /kadai, add oil and heat it
- When hot add fennel seeds (rub between your palms and then add),sliced green chillies, sliced garlic and few curry leaves. Sauté (1 min)
- Add chopped onions and fry with a pinch of salt until soft (2 min)
- Now add fish mix. Fry in low flame (4 to 5 min) and stir periodically
- If it sticks to the bottom of the pan, just scrape it using a spatula
- There must be a little moisture in the fish, so do not fry too long
- After 5 min of frying it is ready to serve
Notes:
- You can use vaalai fish/sword fish instead of shark
- If you are not able to get both the fishes you can use any dense fish
