Introduction:
Soft and moist bakery style honey cake recipe. This cake is
simple to look but the taste is too good...Do try to make this cake

Ingredients:

|
All purpose flour/Maida
|
1 and 1/2 cups/190 gms
|
Baking powder
|
1 tsp
|
Baking soda
|
1/2 tsp
|
Salt
|
a pinch
|
Sugar
|
1/2 cup / 100gms (powder it)
|
Egg
|
1
|
Milk
|
3/4 cup / 180 ml
|
Oil
|
1/2 cup /110 ml
|
Vanilla essence
|
1 tbsp
|
For honey syrup:
|
|
Water
|
1 tbsp
|
Honey
|
2 tbsp
|
For glaze:
|
|
Jam
|
2 tbsp (any jam of your choice)
|
Garnishing:
|
|
Desiccated coconut
|
2 tbsp
|
Or
|
|
Fresh grated coconut
|
2 tbsp
|
Method:
- In a mixing bowl add one egg and whisk (1 min).To the whisked egg add milk, oil, vanilla essence
- Whisk well
- Place a sieve on top of the bowl and add all purpose flour, powdered sugar, baking powder, baking soda, salt and sift directly into the liquid mix
- Whisk well until well mixed. Pour this batter into a greased cake tin and bake in a preheated oven at 180 degree C for 20 mins ( preheat oven at 180 degree -10 mins)
- Remove cake from cake tin and allow it to cool completely. Make holes on top of the cake using a wooden skewer and keep it aside
- Meanwhile heat a small pan and add 1 tbsp water .When hot add 2 tbsp honey, mix well and immediately switch off heat.
- Spread half of this syrup on top of the cake. Heat the remaining half of the syrup. Add 2 tbsp jam and mix well for 1 min.
- Leave it to cool. Then spread it on top of the cake evenly
- Sprinkle desiccated coconut. If you are using fresh coconut -dry roast it for 2 mins and then sprinkle over the cake
- Your bakery style honey cake is ready to serve
Notes:
- For eggless version add 1/2 cup of curd /yogurt instead of egg and reduce milk to 1/2 cup instead of 3/4 cup...If you feel the batter is thick then add a little more milk
