Burmese Chicken Khow Suey (Coconut milk noodles)

Ingredients:

Noodles (any type of noodles)

For making coconut milk soup:

Oil
 1 tbsp
Onion (medium)
1 finely chopped
Green chilly
 1 cut into half
Dried red chillies
 3
Ginger and garlic paste
 1 tsp
Boneless chicken pieces
125 gms cut into thin strips
Mushroom
 5 to 6 cut into slices
Carrot and beans (chopped & cooked)
 ¼ cup
Thick coconut milk
 2 cups
Soya sauce
 1 tsp
Salt
 to taste
Sugar
 ½ tsp
Chopped coriander leaves

Condiments/Toppings:

Fried onions
according to taste
Fried garlic
according to taste
Chopped coriander leaves

Lime juice
according to taste
Boiled egg
Method:
Cook noodles according to packet instructions and keep it aside
Soup preparation:
  1. In a kadai add oil. When hot add chopped onions, green chillies, red chillies and fry for 2 mins
  2. Add ginger garlic paste and fry until there is no raw smell. Add chicken strips and fry until cooked. You can add a little salt while frying chicken strips
  3. Now add mushrooms and sauté on medium heat for 2 mins. Add (chopped & cooked) carrot and beans and sauté for 2 more mins
  4. Pour coconut milk .Add soya sauce, salt and sugar .Mix well.
  5. And when it begins to boil turn off heat and add chopped coriander leaves

How to serve:
  1. In a bowl add cooked noodles. Pour one or two ladleful of soup
  2. Add condiments/toppings (fried onion, fried garlic coriander leaves, lime juice, boiled egg ) according to taste  and serve

Notes:
  • You can add any vegetable of your choice
  • If you want to make a vegetarian version of this soup, just skip chicken strips
  • You can add more condiments/toppings like fried peanuts, chilly flakes etc
  • If you want your soup to be spicy add a little chilly powder to it
  • If you want to thicken the soup, add 1 or 2 tsp of gram flour/kadalai mavu ( mixed in a little water )into the soup, immediately after adding coconut milk
