Khow Suey is a soupy noodle dish, made with noodles drenched
in a delicately spiced coconut milk soup…It is served with an assortment of
condiments/toppings such as fried onion, fried garlic, chilly flakes, fried
peanuts etc…There are many variants of khow suey recipe…This is one of the

Ingredients:

Noodles (any type of noodles)
|
|
For making coconut milk soup:
|
|
Oil
|
1 tbsp
|
Onion (medium)
|
1 finely chopped
|
Green chilly
|
1 cut into half
|
Dried red chillies
|

Ginger and garlic paste
|
1 tsp
|
Boneless chicken pieces
|
125 gms cut into thin strips
|
Mushroom
|
5 to 6 cut into slices
|
Carrot and beans (chopped & cooked)

Thick coconut milk
|
2 cups

Soya sauce
|
1 tsp
|
Salt
|
to taste
|
Sugar
|
½ tsp
|
Chopped coriander leaves

|
Condiments/Toppings:
|
|
Fried onions
|
according to taste

Fried garlic

according to taste

Chopped coriander leaves

Lime juice

Boiled egg
|
Method:
Cook noodles according to packet instructions and keep it
aside
Soup preparation:
- In a kadai add oil. When hot add chopped onions, green chillies, red chillies and fry for 2 mins
- Add ginger garlic paste and fry until there is no raw smell. Add chicken strips and fry until cooked. You can add a little salt while frying chicken strips
- Now add mushrooms and sauté on medium heat for 2 mins. Add (chopped & cooked) carrot and beans and sauté for 2 more mins
- Pour coconut milk .Add soya sauce, salt and sugar .Mix well.
- And when it begins to boil turn off heat and add chopped coriander leaves
How to serve:
- In a bowl add cooked noodles. Pour one or two ladleful of soup
- Add condiments/toppings (fried onion, fried garlic coriander leaves, lime juice, boiled egg ) according to taste and serve
Notes:
- You can add any vegetable of your choice
- If you want to make a vegetarian version of this soup, just skip chicken strips
- You can add more condiments/toppings like fried peanuts, chilly flakes etc
- If you want your soup to be spicy add a little chilly powder to it
- If you want to thicken the soup, add 1 or 2 tsp of gram flour/kadalai mavu ( mixed in a little water )into the soup, immediately after adding coconut milk
