Method:
- Boil 2 cups of water.
- Remove corn kernels from the corn cob or use frozen corn. Add these corn kernels to boiling water with salt
- Boil it for 3 minutes on medium flame .Drain water completely (if there is moisture in the corn they will stick together and will not come out crispy)
- Leave it to cool down. Once cooled add corn flour, rice flour, pepper powder and salt
- Mix well. Add a tsp of water& mix well (do not add more water)
- Leave in the freezer for 15 mins
- Heat oil in a kadai/pan. Shake off excess flour from the corn and add to the medium hot oil
- (While frying sometimes corn kernels may pop/burst, if so, cover the pan partially with a lid)
- Do not mix it for 1 min. Then stir it occasionally. Fry until golden brown ….
- Drain off over kitchen paper/tissue paper (do not leave it on the paper for a long time –it may turn soggy)
- Transfer to a bowl. Add Amchur powder, chilly powder, salt, pepper powder, cumin powder, chopped onions, chopped coriander leaves and a dash of lime juice. Mix everything together and serve immediately..
Notes:
- If using frozen corn kernels just thaw them until they are soft .If there is water in them, dab with a kitchen towel/cloth and skip the boiling step. (Boiling process)
- Adjust the amount of spices and condiments according to your taste.
- Chat masala can also be added
- Serve immediately after mixing the spices and condiments (it may lose its crispness, if rested)
