Crispy corn | Crispy sweet corn

Ingredients:

For boiling:

Sweet corn
1
Or

Corn kernels (fresh or frozen)
1 cup
Water
2cups
Salt
1/4 tsp
For frying:

Oil
for deep frying
Corn flour
3tbsp
Rice flour
3 tbsp
Salt
1/4 tsp
Pepper powder
1/4tsp
Water
 1 tsp
For masala:

Amchur powder (dried mango powder)
1/4 tsp
Chilly powder
1/4 tsp
Cumin powder/jeera powder
1/4 tsp
Pepper powder
1/4 tsp
Onion (medium)
1/4 chopped
Salt
1/4 tsp
Lime juice
as needed
Chopped coriander leaves

Method:
  1.  Boil 2 cups of water.
  2. Remove corn kernels from the corn cob or use frozen corn. Add these corn kernels to boiling water with salt
  3. Boil it for 3 minutes on medium flame .Drain water completely (if there is moisture in the corn they will stick together and will not come out crispy)
  4. Leave it to cool down. Once cooled add corn flour, rice flour, pepper powder and salt
  5. Mix well. Add a tsp of water& mix well (do not add more water)
  6. Leave in the freezer for 15 mins
  7. Heat oil in a kadai/pan. Shake off excess flour from the corn and add to the medium hot oil
  8. (While frying sometimes corn kernels may pop/burst, if so, cover the pan partially with a lid)
  9. Do not mix it for 1 min. Then stir it occasionally. Fry until golden brown ….
  10. Drain off over kitchen paper/tissue paper (do not leave it on the paper for a long time –it may turn soggy)
  11. Transfer to a bowl. Add Amchur powder, chilly powder, salt, pepper powder, cumin powder, chopped onions, chopped coriander leaves and a dash of lime juice. Mix everything together and serve immediately..

Notes:
  • If using frozen corn kernels just thaw them until they are soft .If there is water in them, dab with a kitchen towel/cloth and skip the boiling step. (Boiling process)
  •  Adjust the amount of spices and condiments according to your taste.
  • Chat masala can also be added
  • Serve immediately after mixing the spices and condiments (it may lose its crispness, if rested)
