can be stored in your pantry for baking quick, soft, super moist &

Serves: Makes a 6 inch cake/ 7 to 8 cup cakes

Ingredients:
|
|
Chocolate cake pre-mix:
|
|
All purpose flour / Maida
|
3/4 cup / 90 gms
|
Castor sugar / fine sugar
(Or grind sugar to a coarse powder)
|
3/4 cup / 150 gms
|
Cocoa powder
|
1/4 cup / 30 gms
|
Milk powder
|
3 tbsp
|
Baking powder
|
1/2 tsp
|
Baking soda
|
1/2 tsp
|
Salt
|
1/4 tsp
|
To bake cake:
|
|
Eggs
|
2
|
Oil (any neutral flavored oil) / refined oil
|
1/4 cup / 60 ml
|
Water
|
1/2 cup / 120 ml
|
Vanilla essence
|
1/2 tsp
|
For eggless cakes:
|
|
Replace eggs with yogurt / curd
|
1/2 cup
|
Method:
- In a bowl mix all purpose flour, sugar, cocoa powder, milk powder, baking powder, baking soda, salt
- Mix well without lumps and store in an airtight container or zip lock pouch or bag
- Baking cake with pre-made chocolate cake mix:
- In a deep bowl whisk eggs until frothy. Add oil, water and vanilla essence
- Whisk well and then add the chocolate cake pre-mix
- Whisk until well combined (Do not over-mix the batter)
- You can bake a 6 inch cake with this batter or 7 to 8 cup cakes
- Bake at 180 degree C (20 to 25 mins for cake) (15 to 20 mins for cupcakes)
- Or you can bake the cake in a kadai or pressure cooker
- You can frost or glaze the cake (optional)
Notes:
- You can double or triple the ingredients to make larger cakes or make two to three batches and store it
- You can store it for two months (if stored properly in an airtight container or zip lock bag in a cool and dry place) or just store it in the freezer (it will last even longer)
