Egg cutlet


 

Facts:
In India cutlets refer to mashed vegetables or cooked meat/prawns/fish (with spices), that is fried with a coating of flour/ bread crumbs and eggs. Whereas in most parts of the world, cutlet means a thin slice of meat from chicken, veal or pork, usually cut from the legs or ribs. And the dishes made from these slices are also called as cutlets.
Introduction:
             I got this recipe from a tamil cookbook " palsuvai  malar ". My early years of experimenting different recipes were with the help of this book. I call this egg cutlet as "Indian scotch eggs", because it looks  somewhat  similar , with a crispy outer coating and soft inner filling. But instead of wrapping the egg in sausage meat , mashed  potatoes are used in this cutlet. It  is perfect for an evening snack, with ketchup or mint chutney. Enjoy cooking this recipe....

Ingredients:


Potatoes (large)
 2 (boiled and mashed)
Eggs
2 (boiled and cut into half)
Onions(medium)
1 (chopped)
Chilly powder
1/2 tsp
Coriander leaves
1 tbsp ( chopped)
Salt
1/4 tsp or according to taste

For coating:


Bread crumbs
1/2 cup
Egg
1 ( beaten with a pinch of salt)

For frying:


Oil
3 tbsp


Method:
  • Boil and mash the potatoes
  • To it add chopped onions, chopped coriander leaves, chilly powder and salt
  • Mix everything together
  • Divide it into 4 equal portions Keep it aside
  • For the coating, beat the egg with a pinch of salt
  • Take a small greased plate place one portion of the potato mix and flatten it
  • Place the egg on it and cover the egg completely with the potato mix
  • Now dip it in the egg and roll it over the bread crumbs
  • Heat oil in a tawa and shallow fry the cutlets in low flame
  • After 2 min flip and fry the other side of the cutlet , carefully
  • Remove from tawa after 2 min
  • Serve with tomato sauce or mint chutney
Notes:
  • You can shallow fry or deep fry the cutlets.
  • Instead of chilly powder you can add pepper powder or minced green chillies\
  • You can use whole eggs instead of slicing the egg into half.
