Mutton chops gravy



Interesting facts:
Meat chop is a cut of meat which usually comes with a rib part of the backbone. Chops are generally cut from lamb, pork, veal and mutton. In India, mutton usually means  "goat meat". While in many other countries sheep's meat is referred as mutton.

How do I buy meat?
I check the colour of the meat.
Pale red / pink - tender meat (young goat), cooks  faster.
Red/ dark red    - little tough and takes time to cook.

Some, like to eat tough meat, so it depends on each ones taste. While buying chops most of the butchers use a cleaver knife to beat the chops to tenderise it. The bones get crushed and while eating you get small pieces of bones in your mouth. So to avoid this you can use a meat tenderiser at home or take care to buy tender chops, so no beating is required.

Introduction:

I cook mutton chops in my own style but, this particular recipe, I learnt from my mother-in-law. A favourite family recipe, made with whole spices, onions, tomatoes, ginger, garlic and spice powders. This mouth watering non-vegetarian recipe is a must try. Loaded with flavours, this gravy is a great accompaniment to briyani, pulao, rasam, sambar, chapathi, appam etc...Do try cooking this recipe and enjoy eating it...

Ingredients:     
Mutton chops
 250 grams
Onions (medium)
 2 sliced
Tomato (medium)
 2 sliced
Ginger garlic paste
 1tbsp
Garam masala powder
 1/2 tsp
Green chilly
1 slit
Chilly powder
2 tsp
Turmeric powder
1/4 tsp
Few curry leaves

Salt
1/2 tsp
Water
1/2 cup
Tempering :
Shallots/small onions
 20 nos sliced
Cinnamon             
 2 pieces
Fennel seeds         
1/2 tsp
Few curry leaves

Oil                   
2 tbsp

Roast & powder:
Fennel seeds        
1 tsp
Pepper corns        
1 tsp
Garnishing:
Coriander leaves
  

Method :
  1. Add mutton chops , sliced onions, slit green chilly, few curry leaves in a cooker.
  2. To it add sliced tomatoes, ginger garlic paste.
  3. Add chilly powder, turmeric powder, garam masala.
  4. Add salt and water .Mix well.
  5. Close cooker and switch on the stove.
  6. Cook for 3 whistles in high flame and 5 min in low flame. Switch off.
  7. Separate the stock and the meat and keep it aside.
  8. In a small pan dry roast fennel seeds and pepper corns.
  9. Powder it and keep it aside.
  10. Take a pan add oil. When oil is hot add cinnamon and fennel seeds and few curry leaves.
  11. Add shallots/small onions fry until golden brown.
  12. Now add the stock and simmer until it reduces into half.
  13. Add the mutton chops and give a quick stir.
  14. Sprinkle the powdered pepper corns and fennel seeds into the gravy.
  15. Mix carefully without breaking the chops and simmer for 1 min.
  16. Garnish with coriander leaves.
  17. Mutton chops gravy is ready.
Notes:
  1. Adjust chilly powder according to your taste.
  2. Cooking time may vary depending on the meat and cooker.
  3. If you want more gravy add one more onion and tomato while pressure cooking the mutton chops.
