Interesting
facts:
Meat chop is a cut of meat which usually comes with a rib
part of the backbone. Chops are generally
cut from lamb, pork, veal and mutton. In India, mutton usually means "goat meat". While in many other
countries sheep's meat is referred as mutton.
How do I buy meat?
I check the colour of the meat.
Pale red / pink - tender meat (young goat), cooks faster.
Red/ dark red -
little tough and takes time to cook.
Some, like to eat tough meat, so it depends on each ones taste. While buying chops most of the butchers use a cleaver knife to beat the chops to tenderise it. The bones get crushed and while eating you get small pieces of bones in your mouth. So to avoid this you can use a meat tenderiser at home or take care to buy tender chops, so no beating is required.
