Ingredients:

Anchovies/Nethili
|
250 Gms
|
Chickpea flour/kadalai mavu
|
5 tbsp
|
Rice flour
|
2 and 1/2 tbsp
|
Chilly powder
|
1 and 1/2 tsp
|
Turmeric powder
|
1/2 tsp
|
Ginger garlic paste
|
1 tsp
|
Lime juice
|
1 tbsp
|
Salt
|
1 tsp
|
Oil
|
1 cup
|
Method:
- Clean anchovies/Nethili (remove head and guts)
- To the cleaned anchovies add chickpea flour, 1 and 1/2 tbsp of rice flour, chilly powder, turmeric powder, ginger garlic paste, lime juice and salt
- Mix everything together
- Marinate (at least 15 min)
- Just before frying add 1 tbsp of rice flour and give a quick mix
- Heat oil in a frying pan .When hot add anchovies /Nethili and fry on medium heat
- Fry until golden brown (approximately 3 to 4 min)
- Serve immediately
Notes:
- Divide the fish into two or three batches and fry (do not over crowd pan)
- Serve immediately (as it cools down it turns soggy)
- Use small sized anchovies for better results
- Adjust chilly powder according to taste
