Jini dosa (Mumbai street style Dosa)



Introduction:
Jini dosa is a popular street food from Mumbai. Jini dosa is a fusion of south Indian Dosa and Mumbai street food. The end result of this fusion is a yummy, crispy, tangy, spicy, cheesy dosa which everyone is sure to fall in love with. This is a basic recipe of Jini dosa. You can recreate it with your choice of veggies. If you add less stuffing it is easy to roll up, but I love to load my dosa with lots of veggies and cheese ,so rolling is a bit difficult so I just fold it or serve it like a pizza...It does not need any accompaniments but if you want you can serve with coconut chutney…

Ingredients:

Dosa batter
1/2 cup (1 big ladle or 2 small ladleful)
Butter
1 tsp+1/4 tsp
Schezwan chutney/sauce
1/2 tbsp
Pav bhaji masala
1/2 tsp
Tomato sauce
1/2 tbsp
Chat masala
1/4 tsp
Spring onion
2 tbsp (chopped)
Cabbage
2 tbsp (shredded)
Capsicum
2 tbsp (julienned)
Coriander leaves
 1 tbsp (chopped)
Processed cheese
1 cube (grated)
Mozzarella cheese
2 tbsp (grated)

Method:
  1. Pour a ladle full of dosa batter on dosa tawa and spread it
  2. In the centre of the dosa add 1 tsp butter, Schezwan chutney/sauce, pav bhaji masala, tomato sauce, chat masala
  3. Mix everything in the centre and spread it on the dosa
  4. Sprinkle chopped spring onions, shredded cabbage, julienned capsicum, chopped coriander leaves
  5. Finally add grated processed and mozzarella cheese.
  6. Apply 1/4 tsp butter on the sides of the dosa
  7. When cheese starts to melt turn off heat
  8. Roll it up or fold and serve

Notes:
  • The quantity of Schezwan chutney /sauce and tomato sauce can be adjusted
  • Dosa can be made thick or thin (if making thin dosa- add fewer vegetables)
  • Adding cheese is optional
  • You can add cheddar cheese and mozzarella cheese instead of processed cheese
  • Vegetables can be finely chopped and added
  • You can mix the sauces, butter, masala and vegetables all together in the centre and spread on the dosa
