Muskmelon ice-cream/mulam pazham or kirni pazham ice-cream



Introduction:
This homemade ice-cream recipe is the easiest ice-cream you will ever make with just three ingredients (cream, condensed milk, muskmelon puree).You can add any fruit puree in this recipe. But adding muskmelon puree gives your ice-cream an interesting twist. It will be a delightful experience for your taste buds. Do try making this ice-cream at home and enjoy eating it. Muskmelon ( cantaloupe) is called as mulam pazham or kirni pazham in tamil.

Ingredients:

Medium fat cream
1 cup (cold)
 Or

Heavy cream
1 cup (cold)
Muskmelon puree
1/2 cup
Sweetened Condensed milk
1/2 cup
Chocolate chips
Optional

Method:
  1. The mixing bowl and the whisk used to whip cream must be chilled 
  2. Scoop out the flesh from muskmelon and puree it in a blender (do not add water)
  3. In the chilled mixing bowl add medium fat cream or heavy cream (cold)
  4. Whip with an electric beater until soft peaks (3 min)
  5. Add muskmelon puree, condensed milk and mix with a whisk or spatula (do not whip)
  6. Pour into a freezer container and freeze 6 to 8 hours or overnight
  7. Take the frozen ice-cream from freezer 5 to 10 min prior to serving
  8. Serve with chocolate chips (optional)

Notes:
  • If heavy cream is not available then use medium fat cream (using heavy cream makes the ice-cream softer and creamier)
  • Homemade ice-cream usually contains much less air than stuff we buy in the store.(Air keeps ice-cream soft)
  • So most of the time when we take out homemade ice-cream from freezer it is usually hard and impossible to scoop
  • Take your ice-cream 5 to 10 min prior to serving so it softens up
  • Or leave it in the refrigerator at least 1/2 hour before serving
