Burmese Atho - Popular street food



Introduction:
Burmese Atho is a popular street food in India. This is a cold noodle dish. The garlic oil, fried onion, fried garlic added into it, gives a unique texture and taste to this dish...Along with shredded cabbage Atho is garnished with crushed crispy bejo(bejo is a crispy thattai like snack item made with rice flour and bengal gram).I  have not included this bejo in the recipe...If you want you can make bejo at home or you can add thattai or crisps for that extra crunch...Atho on its own tastes great, but it is usually served with plantain stem soup which gives a different flavour to the dish...Will post plantain stem soup recipe soon...

Ingredients:

For cooking noodles:

Plain noodles or egg noodles
250 Gms
Orange food colour
1/8 tsp (optional)
Salt
1/4 tsp
Water
3 cups
For frying:

Oil
3 tbsp
Onion (large)
1 sliced
Garlic
 15 cloves sliced
Other ingredients:

Cabbage (shredded)
1/2 cup
Onion (medium)
1 sliced
Chopped coriander leaves

Roasted Bengal gram powder/Pottu kadalai powder/Chutney Dal powder
1/4 cup
Chilly flakes
2 tsp
Tamarind juice
1/4 cup
Salt or salt water
1/4 tsp
Method:
  1. Take 3 cups of water in a pan .To it add food colour and salt
  2. When it starts to boil add noodles and cook .It takes at least 3 to 4 min to cook in medium flame
  3. The cooked noodles must be firm but fully pliable. Drain off and keep it aside
  4. In a small pan or kadai add oil. When hot, fry the sliced onions until golden brown (3 min)
  5. Drain off and keep it aside
  6. Now add sliced garlic in the same oil and fry until golden brown (2min)medium flame
  7. Drain off and keep it aside
  8. Keep aside the onion and garlic fried oil
  9. Take a wide bowl. To it add Shredded cabbage, sliced onion, chopped coriander leaves, roasted bengal gram powder, salt or salt water, chilly flakes, fried onion, fried garlic, tamarind juice and one or two tsp garlic fried oil ( all these ingredients can be adjusted according to taste)
  10. Mix everything using your hand
  11. Now add noodles and mix together (use a fork or mix with your hand)
  12. Garnish with shredded cabbage
  13. And Atho is ready to serve

Notes:
  • I have given approximate quantity (other ingredients) for 250 Gms of noodles
  • You can adjust quantity according to taste
