Introduction:

coffee cake topped with silky smooth Dalgona whipped coffee. This is a delectable
combination. The trending Dalgona coffee whipped cream can be used as a topping
to any kind of desserts like brownies, cakes, milkshakes....It is a special
treat for all the coffee lovers out there....

Ingredients:

|
For cake:
|
|
All purpose flour/Maida
|
1 cup
|
Sugar (powdered)
|
3/4 cup
|
Cocoa powder
|
2 tbsp
|
Baking powder
|
1/2 tsp
|
Baking soda
|
1 tsp
|
Oil
|
1/2 cup
|
Curd/yogurt
|
1/4 cup
|
Milk
|
1/4 cup
|
Instant coffee powder
|
1 tsp
|
Hot water
|
1/4 cup
|
For Dalgona whipped cream:
|
|
Instant coffee powder
|
1 tbsp + 1 tsp
|
Sugar
|
6 tbsp
|
Water
|
2 tbsp + 2 tsp
|
Garnish:
|
|
Chocolate chips (optional)
|
Method:
- Mix 1 tsp coffee powder in 1/4 cup of hot water and keep it aside
- In a deep bowl sift together all purpose flour/Maida, powdered sugar, cocoa powder, baking soda and baking powder
- Now add the wet ingredients (oil, milk, curd/yogurt, prepared coffee (coffee powder + hot water)) Preheat oven at 180 degree C - 10 min
- Whisk everything together (do not over beat the batter)
- Pour the batter into prepared cake pan
- Bake at 180 degree C for 25 -30 min
- Remove cake from oven and check if it is baked properly (a thin skewer or toothpick inserted into the center of the cake comes out clean)
- If toothpick comes out with wet batter bake for another 5 min or more
- Loosen the sides, flip it over and allow it to cool completely
- Meanwhile prepare the Dalgona whipped cream
- Take instant coffee powder (2 tbsp+1 tbsp), Sugar (6 tbsp) and Water (2 tbsp+2 tsp) in a deep bowl
- Use an electric beater or a wire whisk and whip (3 to 4 min) on high speed
- If you are using a wire whisk it will take around 5 min
- Whip until the mixture turns pale, fluffy and silky smooth
- Spread this cream evenly over the cooled cake
- Sprinkle some chocolate chips on top of it (optional)
Notes:
- How to prepare cake pan- If you have parchment paper, use it to line the bottom of the pan then apply some oil or butter on the sides of the pan and dust it with all purpose flour( 1 tbsp).If you do not have a parchment paper just coat the pan with butter or oil and then dust it with all purpose flour
- The whipped coffee cream is sweet and slightly bitter but it is perfect with the cake .If you want to lessen the bitter taste add only 1 tbsp coffee powder 2 tbsp water and 6 tbsp sugar.
