Egg briyani


Introduction:
Egg briyani is a must try recipe for all the egg lovers. There are different methods of preparing this briyani but this is one of the quickest and easiest egg briyani you can make... When you are craving for briyani and you don’t have any other options (non veg ) do try to make this briyani..This egg briyani is wholesome and will fulfill your briyani cravings....

Ingredients:

Basmati rice
1 and 1/2 cups
Cinnamon
4 pieces
Cloves
5
Cardamom
4
Fennel seeds
 1 tsp
Pandan leaf/Rambha leaf or Bay leaf
 4 to 5 pieces
Onions (medium)
4 sliced
Ginger garlic paste
1 tbsp
Tomatoes(large)
2 sliced
Green chillies
2 broken into two
Coriander leaves
one handful chopped
Mint leaves
one handful chopped
Chilly powder
1 and 1/2 tsp
Turmeric powder
1/2 tsp
Garam masala or Briyani masala
1 tsp
Ghee
1 tbsp
Oil
2 tbsp
Water
3 cups
Salt
1 and 1/2 tsp
Egg masala:

Boiled eggs

Egg
1
Chilly powder
1/2 tsp
Turmeric powder
1/4 tsp
Gram flour/kadalai mavu
2 tbsp
Salt
1/4 tsp
Oil
1 tbsp
Garnish:

Fried cashew nuts in tbsp ghee

Chopped coriander and mint leaves

Method:
  1. Wash and soak Basmati rice for 1/2 an hour
  2. Boil four eggs, De-shell it and slit lengthwise
  3. Break one egg into a bowl add salt, chilly powder, turmeric powder, gram flour and whisk without lumps
  4. If it is thick add a tbsp of water mix well and add the boiled eggs
  5. Take 1 tbsp oil in a pan add the boiled eggs along with masala
  6. Fry in medium flame (2 min) and keep it aside
  7. Take a cooker pan add ghee and oil. When hot add Cinnamon, Cloves, Cardamom, Fennel seeds, Rambha leaf, green chillies, chopped coriander and mint leaves
  8. Fry for half a minute. Then add sliced onions, salt and fry for 3 min until onions turn golden
  9. Add ginger garlic paste and fry for 1 min (until no smell)
  10. Add chilly powder, turmeric powder, garam masala or briyani masala (fry 1 min)
  11. Add water and allow it to boil
  12. Check salt. If needed add more salt
  13. If needed add juice of a half a lime
  14. When it starts to boil add washed, soaked and drained rice. Cook in open pan in medium flame
  15. When water is almost absorbed, add fried cashew nuts with ghee and chopped coriander, mint leaves
  16. Close cooker and cook in low flame for 5 min
  17. Open cooker once steam is released and fluff rice gently
  18. Add the eggs and the scrambled egg masala
  19. Mix gently
  20. Egg briyani is ready to serve

Notes:
  • You can garnish egg briyani with fried onions
  • For extra texture you can scramble an omelette and add to the briyani
  • I  have added rice and water in 1:2 ratio, but if you want firm cooked rice reduce quantity of water and add 1: 1 ½ ratio
