Potato Sambar / Thoothukudi Potato Sambar


Potato sambar/Thoothukudi potato sambar is made without any dal/lentils..Potatoes and tomatoes form base of this sambar.This sambar is very popular in Thoothukudi households.
It tastes great with idli/dosa....

Ingredients:

Potatoes (large)
 2
Tomatoes (medium)

Turmeric powder
1/2 tsp
Salt
1 tsp
Water
 1 cup
To grind:

Coconut
 1/4 cup (grated)
Jeera / seeragam
1 tsp
Garlic
 8 small cloves
Dried red chillies
4
Water
1/4 cup
Tempering:

Oil
2 tbsp
Mustard seeds
1/2 tsp
Split black gram/ulutham paruppu/split urad Dal
 1/2 tsp
Jeera /seeragam
 1/2 tsp
Fenugreek seeds/vendayam
1/4 tsp (optional)
Small onions/shallots
3 chopped
Few curry leaves

Method:

  1. Cook potatoes and tomatoes in a pressure cooker ( 2 whistles on high & 5 mins on low )
  2. When cooled, peel potatoes and mash them with tomatoes . keep it aside
  3. In a blender jar add grated coconut,jeera,garlic,dried red chilies ,water ( 1/4 cup) and grind to a smooth paste
  4. Add this paste to the mashed potatoes and tomatoes.Add water( 1 cup),turmeric powder ,salt and mix well. Switch on stove and allow it to simmer for 5 mins
  5. For tempering
  6. Heat oil in a small pan /kadai.When hot  add  mustard seeds,split black gram,jeera,fenugreek seeds,chopped small onions and few curry leaves
  7. Fry until onions turn brown
  8. Pour the tempering over the sambar .Simmer for 2 mins and garnish with chopped coriander leaves
  9. Serve with idli/dosa

Notes:

  • Add more tomatoes, depending on the sourness  of tomatoes
  • Adjust chillies according to taste
  • The sambar thickens on cooling,adjust consistency of sambar by adding water while reheating or add hot water
