Mutton pepper curry /Mutton milagu kulambu



Introduction:
Mutton pepper curry /Kulambu is a traditional South Indian curry /kulambu. This mutton curry is spicy with bursting flavours and wonderful aroma. Ingredients:

To grind:

Coconut (grated)
1/2 cup
Cinnamon / pattai
2 inch piece
Clove / kirampu

Cardamom / yelakkai

Black stone flower / Kalpasi
a small piece
Pepper / milagu
1 + ½ tbsp
Fennel seeds / sombu
1/2 tbsp
Cumin seeds / jeera
1 tsp
Poppy seeds / khus khus
1/2 tbsp
Coriander powder
2 tbsp
Dried red chillies

Water
1/4 cup
For curry/kulambu:

Oil
3 tbsp
Cinnamon / pattai
2 inch piece
Cloves
2
Cardamom
2
Black stone flower / kalpasi
a small piece
Star anise / annacippu

Bay leaf / briyani leaf
1
Green chilly
1 slit
Few curry leaves

Few mint leaves

Few coriander leaves

Small onions / shallots
15 (cut into half)
Ginger (julienned (cut into long thin strips))  
2 inch piece
Garlic (julienned ( cut into long thin strips))

Mutton pieces
300gms
Turmeric powder
1 tsp
Salt
to taste
Tomatoes (medium)
chopped
Potatoes (medium)
2 (cut into big pieces)
Water
1 cup
Thick coconut milk
½ cup
Lime juice
1 tbsp
Method:
To grind:
  1. In a mixie/ blender jar add all the ingredients under (to grind list) and grind to a smooth paste

Curry / kulambu preparation:
  1. Pour oil into a cooker pan and heat it. When hot, add cinnamon, cloves, cardamom, black stone flower/Kalpasi, star anise, few curry leaves, few coriander leaves, few mint leaves, green chilly and fry for I min
  2. Add small onions/shallots, julienned ginger & garlic and fry until onions turn golden brown
  3. Add mutton pieces, turmeric powder and sauté on high heat for 2 mins
  4. Add chopped tomatoes and salt. Fry until tomatoes are cooked. Add potatoes and give a quick mix
  5. Now pour the ground coconut masala and water and mix well
  6. Check salt and if needed add more salt & water .Close cooker and cook (3 whistles on high flame and 5 minutes on low flame) .Cooking time may vary depending on the size of the mutton pieces
  7. Once cooked pour thick coconut milk .Simmer for 2 mins on low flame. At this stage, check the spice level and if you feel you need more, add pepper powder.
  8.  Turn off the stove and add the lime juice. Mutton pepper curry/kulambu is ready to serve
